Favourite pancake toppings

As it’s Shrove Tuesday (aka Pancake Day) at the end of this month we asked the Blinis team to share their all time favourite toppings.

It turns out they’re a sweet toothed bunch but if you’ve had the pleasure of sampling our delicious cake selection you probably already know that!

Forget boring old lemon and sugar; why not give these variations a try?

“Pancakes and chocolate are always a winning combination. My all time favourite is a liberal spread of Nutella with a few dollops of vanilla ice cream.”

“You’ve got to get in a sticky mess with a pancake. I love vanilla ricotta cheese (mix vanilla essence and a pinch of sugar into ricotta cheese) with runny maple syrup poured over.”

If you’re less sweet toothed than the Blinis team and prefer a savoury topping, here are three quick and easy delicious pancake combinations.

Smoked salmon, mashed avocado and crème fraîche

Lay the smoked salmon, spread over some mashed avocado and add a dollop of crème fraîche. Top with a squeeze of lemon juice, a grating of zest, a pinch of freshly ground black pepper and a sprinkling of finely chopped fresh chives.

Honey, feta and thyme pancakes

Crumble over the feta, drizzle with honey and scatter the thyme leaves over the top.

Duck with pickled spring onions

Slice cooked duck breasts. Lay one large Chinese lettuce leaf in the centre of each pancake, then top with quick-pickled spring onions and sliced cooked duck breast. Serve with hoisin sauce.
